ALMOND SKILLET CAKE
My friend Karen brought this to a baby shower — so wonderfully chewy and delicious. She’s only ever made it in a cast iron skillet.
In a cast iron skillet put aluminum foil and spray with Pam (oil spray). Preheat oven to 350.
1 1/2 sticks butter, melted (3/4 cup)
1 1/2 cup sugar
2 eggs (add one at a time)
1 1/2 cup flour
1 tsp almond flavoring
Pour batter in skillet, lightly sprinkle 1 Tablespoon sugar and sliced almonds over the top. Cook 30-35 minutes. Cool in the pan. When cool, fold the extra foil on top of the cake to prevent drying out. Serve and enjoy.
