Apple Hill Cake; Moist, Healthy, Easy

I’ve been making this little cake for years. Easy and pretty fast. You can control the fat and fiber as wanted:

Combine: 1 cup granulated sugar
1/2 cup applesauce (or oil)
2 eggs
1/2 cup milk

Add: 4 cups diced apples (for more fiber, leave peel or part of peel on)

Add: 2 cups flour (this can be all whole wheat, white, or a combination)
1 teaspoon salt (less if low sodium desired)
1-2 teaspoons cinnamon
dash of nutmeg
2 teaspoons soda

Add all together in order given. Pour into a 9 x 13 greased cake pan (glass pan is nice for storage if cake is not eaten all at once-it doesn’t pick up a metalic flavor).Bake 25-35 minutes in a preheated 350F oven. Serve it hot, warm, or cold. You can sprinkle confectioner’s sugar on top, frost it or have with whipped cream.

Note: At a family night gathering, every family member was given a baggie with an ingredient for this cake in it. Each person contributed to the cake and learned that each family member is different yet an important part of the family.
