Lady Banks Lemon Pound Cake

1 1/4 cups butter, softened
1 8oz pkg light cream cheese, softened
3 cups sugar
1 Tablespoon fresh lemon juice
Rind of 1 lemon, finely chopped
2 teaspoons vanilla extract
1 teaspoon lemon extract
1/2 teaspoon orange extract
pinch of salt
6 eggs
2 2/3 cups all purpose flour

1. Cream butter, cream cheese, and sugar until fluffy.
2. Cream in lemon juice and extracts.
3. Add eggs one at a time, beating after each.
4. Add flour and salt.

Bake at 325 F:
Prepared pans (greased pan, flour dusting, and parchment paper bottom on rounds).

2 rounds – about 25-30 min
tube pan – about 60-90 min

Let cool 10 min in pan then invert to wire rack. Cool. Frost or Glaze.

Frosting:
1/4 cup butter
1/4 cup cream cheese
4 cups powdered sugar
1 tsp lemon juice (optional)

Glaze:
1-2 cup powdered sugar
1 Tablespoon fresh lemon juice
Rind of 1/2 to 1 lemon, chopped finely
