Marie’s Fry Bread & The Navajo Taco

4 cups of flour (This can be a mix of whole wheat and white. The “stretching” ability of the dough is greater with a higher white flour content)

2 tsp baking powder

1/2 cup powdered milk

3/4 tsp salt

2 cups warm water

1. Mix all ingredients.
2. Let stand for 15 – 60 minutes before use.
3. Shape into 8 – 10 balls.
4. Flatten each ball with the palms of your hands and stretch, rotating the circle as you hold the circle in the air with your hands.
5. Fry each circle in smoking hot oil.
Spear large ‘bubbles’ in the dough on the raw side before turning in the pan.
6. Drain on paper towel.

Fry bread is good plain, with honey or as a “Navajo” taco. For tacos, you could put any and all of the following on your bread: refried beans, cooked ground meat, shredded cheese, chopped lettuce and spinich, chopped tomatoes, chopped peppers, olives, sour cream, salsa, hot sauce.  Thanks Marie, for the authentic recipe!
