Butternut Squash Soup

In my quest to find delicious soups, I came across this little beauty.  Hopefully, you will enjoy it as much as I did.

1 tsp olive oil

1 medium Butternut squash, peeled and cubed

1 medium Sweet Potato, peeled and cubed

4 cloves garlic

1 large onion, chopped

4-5 cups water

2 tsp. Better than Bouillon (Vegetable or Chicken Base)

1 tsp. Paprika

1/4 tsp salt

1. In large pan, sauté onion, garlic, sweet potato, and butternut squash until tender.  Add the water, broth, paprika, and salt. Bring to a boil  Reduce heat; cover and simmer for 20-25 minutes or until vegetables are tender.  Cool slightly.

2. In a food processor or blender, process soup in batches until smooth.  Return all to pan and heat through.  Enjoy.
