Summer Veggie Goodness Soup

I got this recipe from my organic CSA basket.  We were so surprised at how delicious and fresh it was.  Just so you know, all the amounts in this recipe can be modified according to your family’s tastes.  If your kids really like carrots, add more carrots.  We enjoyed a large portion for dinner and then even more the next day as yummy left overs.



Summer Veggie Goodness Soup

1/2 medium yellow onion, diced

3 cloves garlic

1 tbsp Herb de Provence  (or Savory)

1 tsp thyme

1 tsp oregano

32 ounces vegetable broth

15 ounces tomato sauce

1 c potatoes (chopped small)

1 c carrots (chopped small)

1 c summer squash, chopped

1 c garbanzo beans

1 c prepared green fava beans

1 tbsp tomato paste

Salt and pepper to taste

Red pepper flakes to taste

1. Sauté onions until translucent.  Add garlic and sauté for about a minute.  Add seasonings and cook for another minute.

2. Add broth, tomato sauce, potatoes, and carrots and bring to a boil.  Once the potatoes and carrots are soft add garbanzo beans, fava beans, squash, and tomato paste.  Bring back to a boil and then simmer for 10 mins.

3. Ladle into bowls and add salt, pepper and red pepper flakes to taste.

P.S. If you are thinking…. what are fava beans….. you can see the ones I got this week in my CSA basket.  Yummy.

You shell them from the pod, then steam (or parboil) them and peel them one more time.  You will often find this bean in Italian cuisine and Middle Eastern cuisine (ex. falafel).  If you find them in your supermarket or local farmer’s market, pick up a few and try them out.
