Ginger Bread Cookies

Ginger Bread Cookies on platter with some ingredients in backgroundHere’s a twist on Ginger Snaps.  Using fresh ginger and apple sauce make these cookies like little cakes.   A healthy and lowfat recipe.

2 1/4 cup flour (use whole wheat or a mix with all purpose)

2 tsp baking soda

2 tsp freshly grated ginger (or 1 tsp dried)

1 tsp ground cinnamon

1 cup brown sugar (packed)

2 Tbl butter (softened)

1/4 cup applesauce

1/4 cup molasses

1 egg

Granulated sugar (optional)

Mix sugar and butter together.  Add egg & molasses.  Mix in applesauce then the dry ingredients.  Shape into balls and roll in sugar.  Place on a greased cookie sheet.  Cook at 375 F oven for 8-10 minutes. Cool on rack.

These would be good frosted or sandwiched with creme filling or ice cream.
